Potatoes are easy to grow, and the plants can be highly productive if grown under the best conditions. Oklahoma gardeners are fortunate to have a climate well-suited to growing potatoes, and starting your plants at the right time will help make sure your crop is a bountiful one.
Time Frame
Potatoes are considered cool-season vegetables. They are not particularly sensitive to frost, and can be planted earlier than more tender garden plants. You can plant potatoes from mid-February to mid-March. If you live in southern Oklahoma, you should plant during the earlier portion of this range.
Considerations
Potatoes grow best in soil that is well aerated, moist and well drained; avoid compacting the soil. A pH between 5.0 and 5.5 is ideal. Potatoes grow well in sunny conditions, but excessive heat and lack of moisture reduce yield.

Grow fresh vegetables all year in Phoenix. The hot summer sun is a good thing for the right vegetables. Thoughtful garden design protects plants from too much sun. Irrigation and shade are key ingredients to enjoying the fruits and vegetables of your labor through summer's heat.
Irrigation
Irrigating vegetables is a balance of the right amount of water at the right time of day. Thorough watering early in the day provides a reservoir from which plants can draw through the heat of the day. Drip or soaker irrigation is preferred, because water droplets on vegetables or leaves turn into magnifying glasses concentrating sunlight and burning the plant. Overnight watering contributes to molds and soil-transmitted disease. Missing one day's irrigation can kill plants in the summer.
Shade
Peppers, corn, most tomatoes and melons thrive in the heat and sun all day long. Most herbs, basil is an exception, need shade from direct sunlight. Other vegetable plants, such as leeks and eggplant, also need protection from direct afternoon sun. Shade cloths, readily available in the Phoenix area, are easily installed over sensitive plants.
Monsoon
Protect plants from violent summer monsoons and their wind, hail and heavy rain by using poles, stakes or tomato cages to keep plants from breaking during the pummeling. Ensure shade cloth is well anchored and has wind flaps to reduce the chance of it sailing away in the storm.

Description: This herbaceous perennial plant is about 4-6" tall, consisting of 1-2 basal leaves and a flowering stalk with a single flower. Immature plants produce a single leaf and fail to flower, while mature plants that bloom produce a pair of leaves. The basal leaves are up to 6" long and 2" across. They are elliptic, lanceolate, or narrowly ovate, and smooth (entire) along their margins. The upper leaf surface is mottled pale green and brownish or grayish green, while the lower leaf surface is pale to medium green. Both leaf surfaces are glabrous; the upper leaf surface is often waxy. The leaves often curve upward slightly from the midvein to the margins. A naked flowering stalk develops between the basal leaves of mature plants. This stalk is light green to reddish brown and glabrous; it nods downward at its apex, where the flower occurs.
Each nodding flower is about 1½" long and across; it consists of 6 white tepals, 6 stamens with long yellow anthers, and a slender style with a stigma that has 3 lobes that spread outward. The tepals are linear-lanceolate and strongly recurved, while the stamens and style are exerted. The blooming period occurs during mid-spring and lasts about 2 weeks. Each fertilized flower is replaced by a 3-chambered seed capsule that is ovoid and about ¾" long. Each chamber of the seed capsule contains 2 rows of flattened seeds. The root system consists of a corm that is several inches below the surface of the ground; this corm produces fibrous roots at its base and occasionally sends out underground stolons that can form new plants a few inches away from the mother plant. White Trout Lily can produce large colonies of plants if it is left undisturbed for several decades.
Cultivation: The preference is dappled sunlight during the spring, moist to mesic conditions, and a rich loamy soil with decaying leaf mould. Situations involving more shade are tolerated later in the year. The foliage withers away during the summer. It takes several years for a new plant to fully develop and bloom. White Trout Lily is one of the spring wildflowers that is threatened by the spread of Alliaria petiolata (Garlic Mustard) in wooded areas.
Faunal Associations: The flowers are primarily pollinated by both long-tongued and short-tongued bees, including honeybees, mason bees (Osmia spp.), cuckoo bees (Nomada spp.), digger bees (Synhalonia belfragii), Halictid bees (Halictus spp., Lasioglossum spp.), plasterer bees (Colletes inaequalis), and Andrenid bees (Andrena spp.). Description: This herbaceous parasitic plant is 4-18" tall. Small plants are often unbranched, but large plants are paniculately branched with stiff ascending stems. These stems are initially cream, tan, or purple-striped, but they turn brown with age. The surface of each stem is mostly glabrous, but sometimes it is slightly pubescent. The leaves are reduced to insignificant scales; they are located underneath some of the flowers. Along the length of the stems are alternate flowers; the lower stems have cleistogamous (self-fertile) flowers, while the upper stems have perfect flowers that are usually sterile. The cleistogamous flowers are small and bud-like in shape, while the perfect flowers have tubular corollas with short calyces.
The corolla of a perfect flower is about 1/3" (8 mm.) in length, cream- and purple-colored, with 4 short lobes along its outer rim. Each calyx is cream-colored with 5 purple-striped teeth; it is much shorter than the corolla of a perfect flower. Each perfect flower has a single style and four stamens; the latter are hidden within the corolla. The blooming period occurs from late summer into the fall. There is no noticeable floral scent. Each fertile flower is replaced by a small ovoid seed capsule about ¼" (6 mm.) long; it contains numerous tiny seeds that can be blown about by the wind. The root system is fibrous. Sometimes large colonies of this plant can be found.
Cultivation: This parasitic plant contains no chlorophyll and obtains its nutrients from the roots of Fagus grandifolia (American Beech). Without the presence of this tree, Beechdrops cannot survive.
Range & Habitat: The native Beechdrops is uncommon in Illinois; it is found in a few counties of the southern and SE regions of the state (see Distribution Map). Illinois lies at the western range limit of both Beechdrops and the American Beech; both species are more common further to the east. Habitats include mesic woodlands and rocky wooded slopes where American Beech and Sugar Maple trees are usually codominant.
Faunal Associations: Very little information is available about floral-faunal relationships for this species. The perfect flowers may be visited occasionally by long-tongued bees. The ecological value of Beechdrops to animals appears to be low.

None of these species are very common in Illinois, and they should be protected in the areas where they occur. Other species in this family tend to be more stout and less branched than Beechdrops; they also produce larger flowers with similar tubular corollas (exceeding ½" in length). These species don't compete directly with Beechdrops because they are parasitic on the roots of plants other than American Beech; typical hosts are oak trees and various members of the Aster family.

The central stalk is light green to reddish green, terete, rather stout, and quite hairy. One cauline leaf is sessile, while the other cauline leaf has a short petiole up to 2" long. The petioles of the basal and cauline leaves have characteristics that are similar to the flowering stalk. The basal leaves are up to 10" long and 10" across, while the cauline leaves are up to 8" long and 8" across. Both types of leaves have about 5 palmate lobes and their margins are doubly serrated and shallowly cleft. During the blooming period, these leaves are wrinkled, hairy, and smaller in size, but later in the year they become more smooth, less hairy (or even glabrous), and full-sized. The color of the leaves may change from yellowish green during the spring to medium-dark green during the summer.
A flowering plant produces a single terminal flower on a short pedicel (up to 2" long); this pedicel is similar to the central stem in its characteristics. The flower is about ¾" across, consisting of 3 deciduous sepals, no petals, approximately 40 spreading stamens, and approximately 10 clustered pistils in the center. The greenish white sepals drop early and they are not present while the flower is in bloom. The stamens have white filaments and yellow or greenish yellow anthers. The slightly flattened pistils have short beaks and they are initially pale green. The blooming period occurs from mid- to late spring and lasts about 2-3 weeks. By mid- to late summer, the pistils have been replaced by a small tight cluster of bright red berries. Each berry contains 1-2 black shiny seeds. The root system consists of knotty yellow rhizomes and fibrous roots. This plant reproduces by clonal offsets from its rhizomes and by seed. It occasionally forms small colonies.

It prefers moist to mesic conditions and a fertile loamy soil with an abundance of leaf mould. Wild plants are little bothered by disease, although stressed out cultivated plants can be attacked by leaf blight and other diseases. Slugs eat seedlings and the foliage of mature plants, while root knot nematodes occasionally attack the root system. Starting plants from seeds is slow, while vegetative propagation from rhizomes is easier and faster.

As a result, it is easy to identity at either the flowering or fruiting stage. The biggest threat to this species is over-collection of the rhizomes for herbal medicine; these rhizomes can sell for $100/lb. on the wholesale market. They contain the alkaloids hydrastine, berberine, and canadine. Hydrastine is used for feminine complaints, berberine has anti-bacterial and anti-protozoan properties, and canadine is a sedative and muscle relaxant. Under the CITES convention, it is illegal to export the rhizomes and other parts of rare wild-collected plants in the United States. The common name of this plant refers to the yellow rhizomes.

Description: This wildflower has evergreen leaves and semi-woody stems. The entire plant, including the inflorescence, is about 6-10" tall. Plants without an inflorescence are only 3-5" tall. The central stem of each plant is red to brown, unbranched, glabrous, and more or less terete. One or two pairs of smaller opposite leaves occur near the base of the stem, while a single whorl of three larger leaves occur at the base of the inflorescence. The leaves are 1-3" long, ¼–1" across, rather leathery in texture, and glabrous; they are lanceolate to ovate in shape, while their margins have widely spaced dentate teeth. The upper leave surface is dark green, except in areas along the veins, where it is white; this provides the upper leaf surface with a pinnately striped appearance. The lower leaf surface is light green. The petioles of these leaves are short and slender. On fertile plants, the stem terminates in an inflorescence consisting of a nodding umbel, or nodding umbel-like cyme, of 2-5 flowers on a long unbranched peduncle (flowering stalk). Sometimes the inflorescence produces only a single nodding flower. The erect peduncle is pinkish red to light brown, relatively stout, terete, and short-pubescent; the pedicels of individual flowers are similar, except they are shorter (about 1" long) and strongly recurved, holding the flowers face-down. Each flower is about ½–¾" across, consisting of 5 white petals, 5 light green sepals, 10 stamens, and a green pistil. The petals are oval in shape and concave toward the face of the flower. The stamens have showy light pink anthers and very short filaments; the anthers are bifurcated, releasing pollen from round pores at their tips. The pistil consists of a superior ovary, a short style, and large stigma (all green). The ovary is subgloboid in shape and slightly 5-lobed. The style has a short obconic shape with a broad flat tip and even broader base. The stigma is dome-shaped and wider than the style.
The blooming period occurs from late spring to early summer, lasting about 2 weeks. The flowers are fragrant. Afterwards, the flowers are replaced by seed capsules that are about 8 mm. Range & Habitat: Striped Wintergreen is a rare native plant in Illinois, where it is state-listed as 'endangered.' It has been found in only two counties (Cook County and Pope County) within the state; see the Distribution Map. At the present time, it may be extirpated from Cook County because of development. Illinois lies along the NE range-limit of this plant; it is more common in mountainous areas further to the east and southeast. In Illinois, habitats consist of rocky upland woodlands and sandy upland woodlands; the latter habitat occurs along Lake Michigan. In these habitats, oaks (Quercus spp.) are usually the dominant canopy trees. Outside of Illinois, this plant is often found in mixed woodlands and coniferous woodlands. Striped Wintergreen is restricted to high quality natural areas in Illinois.
Faunal Associations: The flowers are cross-pollinated primarily by bumblebees; honeybees also visit the flowers (Standley et al., 1988). These insects obtain nectar from the flowers. The foliage of Striped Wintergreen is regarded as toxic to sheep (Schaffer, 1904), and White-tailed Deer usually avoid it when there are better sources of food (Rawinski, 2016).

Description: This annual plant is about ½–4' tall. Medium to large plants (greater than 1½' tall) branch occasionally, while small plants (less than 1½' tall) are often unbranched. The central and lateral stems are hairless. Alternate leaves are up to 6" long and 4" across; they are ovate or deltoid-ovate with 2-4 large teeth along their margins. These teeth are pointed and widely spaced. The uppermost leaves are moreFlowering Plants narrow and may have only 0-1 teeth along their margins. The widely spreading leaves are medium to dark green and hairless; they are not white-mealy on their undersides. The leaf tips are pointed, while their bases are truncate or slightly indented. The slender petioles are up to 1" long. The central stem and upper lateral stems terminate in panicles of sessile clustered flowers. In addition to these, there are usually secondary panicles that develop from the axils of the upper leaves. The branches of these panicles can be hairless or conspicuously hairy. Individual flowers are green or greenish white and only 1/8" (3 mm.) across, consisting of 5 sepals, 5 stamens, and a flattened ovary with a pair of tiny styles at its apex. There are no petals. The sepals are ovate and slightly keeled. The blooming period can occur from late spring into the fall. On an individual plant in bloom, the flowers are at different stages of development. Pollination is by wind. The persistent sepals only partially cover the developing seeds; there is only one seed per flower. Each seed is covered with a thin membrane that is easily removed. If you enjoy vegetable gardening, you can grow more in less space if you plant certain crops on a trellis. Many types of vining plants grow well when trained onto a trellis, which keeps vegetables off the ground, evenly exposes the entire plant to sun and makes harvesting easier by eliminating the need to bend over when picking the crop.
Vining Plants
Plants that are tendril-producing vines attach readily to a trellis, although gently winding young vines around the support can help get them started. These types include traditional, vining varieties of peas (Pisum sativum), which grow as annuals in all parts of the United States. Peas do best in cool spring weather and produce a crop in seven to ten weeks. If you like green beans, choose vining pole beans (Phaseolus vulgaris), growing them on a trellis for a crop of free-hanging, straight beans easy to see among the vines. Pole beans are annual plants that twine readily as vines lengthen and yield two or three times as many beans as shorter, bush varieties of beans.
Heavy Producers
Plants that produce many fruits during the season can also benefit from trellising, which helps support the heavy crop. Most types of cucumbers (Cucumis sativus) do well on a trellis, with some varieties producing vines that can be up to 6 feet high. Cucumbers grow as annuals and thrive in warm weather for good production. Use soft ties to attach tomato stems gently but securely to the trellis.

Both summer and winter squash grow as annuals throughout the United States.
